Discover why Las Mimosas is being called one of the best hotels in Ibiza

There are certain hotels in Ibiza that make you want to quit your job, wear white crochet dresses, purchase ALL the pink Instagram-worthy flamingos and basically just never go home.

Las Mimosas is one such hotel. Recently built and fabulously brand spanking new in appearance, this minimalist-chic boutique hotel resides in San Antonio Bay. Boasting 11 spacious junior suites and 6 standard sized suites, this elegant holiday haven is ideal for groups of friends, couples and even families with a sense of fun.

When I visited earlier this summer with my sun-loving other half we were impressed at the generous size of our suite – all fluffy white towels, soft cotton bed linen, and abstract artworks. We also delighted as our patio door opened up only meters away from the hotel’s aquamarine pool – complete with its very own pink flamingo of course…

After many fun nights out we would look forward to long, lazy slumbers in the obscenely comfortable beds and would wake to hearty breakfasts of fresh Spanish cheeses, local jams, warm croissants and freshly brewed coffee – perfect for nursing our sozzled, morning-after Ibiza heads.

One evening we decided to have dinner in the hotel’s quaint restaurant and were in awe of how good the food was. Being such foodie fusspots only used to dining abroad in recommended eateries, we were seriously impressed at the tasty dishes we savoured on the night. There was the crispy pan fried seabass served with seasonal vegetables and a heavenly aubergine parmigiana – my favourite cheese-heavy Keto comfort food minus the carbs.

For anyone in search of full body rejuvenation, a pretty spa area offers an inviting jacuzzi, sauna and steam room to help you sweat our all those naughty boozy Ibiza toxins from the night before. A selection of facials, massages and body treatments are also available if you wish to reach blissful nirvana in a more wholesome manner.

Anyone wishing to explore further afield can discover the nearby beaches of Es Pouet or Pinet Playa, and a 15 minute drive takes you to the picturesque shores of Cala Bassa and Cala Conta. For the mind-blowing sunsets and cheeky cocktails, Cafe Mambo is 10 minutes away by car.

We spent our last day in this inviting home-away-from-home sun-worshiping on one of the plush white double sun beds, sipping ice cold mojitos and lazily gazing at the shimmering aquamarine pool in front of us. The pink flamingo had returned and seemed to be beckoning me, so I ended my blissful stay at Las Mimosas in the most apt way I could – with an obligatory social media photo shoot on this newfound inflatable chum.
